Whether you like cheese and beans or tuna on your jacket potato, this quick and easy dinner option is delicious. While cooking jacket potatoes in the oven may produce a super crispy exterior and fluffy interior, they can take hours to turn soft.
In fact, in the oven, it can take around two hours to cook, compared to just a few minutes in the microwave. Good Food has shared a simple and easy to them in the microwave, using just a few ingredients to create the ultimate baked potato.
Ingredients (serves two):Two large baking potatoes
One teaspoon of olive oil

Two sheets of kitchen roll
One microwave-safe plate
Method:Wash the baking potatoes and prick the skins all over with a fork. According to Good Food, the most important thing to remember when cooking them in the microwave is to always prick the potato before.
This allows any steam to escape and will stop them from exploding and creating a mess in the appliance.
Next, lay a piece of kitchen roll on a microwave-safe plate, put the potatoes on it and pop another sheet of kitchen roll on top.
If you want the skin to turn a little crispy, simply massage the potato with a little bit of oil right before you put it in the microwave.
Microwave for four minutes, then turn the hot potatoes over, re-cover with the kitchen roll and cook for another four minutes before turning again.
Keep cooking in one to two minute bursts until they feel soft all the way through and the skins feel slightly crisp and wrinkled.
Take them out and leave them to cool slightly before tucking in with your preferred topping.
