Making your own tomato sauce can offer a more flavourful and nutritious experience compared to store-bought options. Homemade sauce allows for control over ingredients, resulting in a much fresher taste without any preservatives.

Two garlic cloves
Three tablespoons of olive oil
Six tomatoes
Salt and pepper

Maddie's Nonna said: "I'm making a quick pasta with six tomatoes. It's very easy."
To start with, fry the two garlic cloves in three tablespoons of olive oil. Once golden, add the sliced tomatoes and cook for five minutes until slightly reduced.
Sprinkle with salt and pepper, and if you like a kick, add some fresh chilli into the tomato mix.
Keep stirring and pressing the tomatoes down until they become a "beautiful sauce". Maddie's Nonna said: "This is a quick sauce for when you don't have time.
"It's not a passata, that's different, they taste completely different." Next, add some basil for a herby flavour, a little bit of water to loosen the sauce and if you're eating the sauce straight away, now is the time to boil your spaghetti.
Keep the sauce on a low flame for around 10 minutes, until the pasta is al dente. Add the spaghetti to the sauce, then mix it together.
If the sauce and pasta are looking slightly dry, add in some pasta water until it has reached the consistency you desire. Plate up and sprinkle with cheese.
