Sprouted or green potatoes: Is this food safe? Learn what science says for health

News India Live, Digital Desk: Sprouted or Green Potatoes: Potato is the most favorite vegetable of Indian homes, and is used in almost every dish. But often you have seen that green spots start falling in the kept potatoes or sprouts are coming out in them. In such a situation, the question arises whether these potatoes are safe or should be thrown away? Come, let’s know what is better for experts and your health.

Can you eat sprouted potatoes? (Can sprouted potatoes be eaten?)

There is a common belief about sprouted potatoes that they become poisonous, which is not completely true, but there is definitely some part of the truth in it. When the seedlings in the potatoes begin to come out, it means that they are starting to produce a natural glycolkaloids called ‘solonine’. Solonine is a type of toxic compound to protect potatoes from insects and diseases.

  • What to do: If the potatoes only have small, some sprouts and the rest of the potato is solid and normal color, then you can cut these seedlings and green parts. After this you can cook and eat potatoes. However, it is better to use it immediately.

  • What not to do: If the potato is too much withering, has become soft, has shrunk or has a lot of sprouts, especially big and thick, do not eat it at all. It can contain a very high amount of solarin which is harmful to health.

What to do with green potato? (What to do with green potatoes?)

Along with sprouted potatoes, green spots also occur in potatoes. Green color of potato is also a sign of high amounts of solonine. This greenness is caused by chlorophyll which develops on the surface of the potato in the light, but the amount of solarin also increases simultaneously.

  • What to do: If the greenness of the potato is very light and in small parts, you can cut the green portion roughly and remove the rest of the potatoes.

  • What not to do: If the potato is more green, it is better to throw it away. It may have high amount of toxins, which can cause problems like nausea, vomiting, diarrhea or headache. In very serious cases it can also be fatal.

How to save potatoes from sprouting and green?
Always store the potatoes in a cold, dark and dry place. Do not keep them with onion, because the gas emitted from the onion can sprout the potatoes quickly. Potatoes remain fresh for a long time when stored correctly and the production of solanine is low.
