Material:

1 cup dal (arhar, lentils, moong, gram, etc.)

3-4 cups of water (according to type of lentils)

½ tsp turmeric

Salt taste

1 teaspoon oil (optional, for not becoming foam while boiling)

Method:

Soaking lentils:

Soak the lentils for 30 minutes to 1 hour. This will quickly cook.

Boil in water:

Take a thick bottom pan or pot and add 3-4 cups of water to it.

Add soaked lentils and add turmeric, a little salt and 1 teaspoon oil.

Cook until it boils on high heat.

Cook on low flame:

After the boil, reduce the heat and let it cook on low flame.

Keep stirring with a spoon in between and add a little more warm water if needed.

Check the ripening:

Whether the lentils have become soft or not, mash it with a spoon.

If the lentils have melted well, turn off the gas.

Tadka (optional but important to enhance taste!)

Heat 1 teaspoon of ghee/oil in a small pan.

Add ½ teaspoon cumin, 1 pinch of asafetida, 1-2 dry red chillies, 1 fine chopped tomato or onion.

Pour it to the lentils and mix.

Tips:

Hard pulses like pigeonpea, gram and Rajma take more time, soaking them for 4-5 hours will be good.

Light pulses like moong or lentils cook quickly, so they do not need to soak much.

If you want to cook quickly, cook in between and keep it in a while.
