Staff at the beachside spot were setting up to take a snap of their weekend special: Dulce de leche French toast - topped with candied bacon, duck eggs and pecans.
But the dish was simply too appealing for a nearby bird who saw a great opportunity.
The video has left social media users in stitches."We were discussing possible names for the special when it happened," said Amber Sterck, owner of the award-winning Oeuf cafe in Brighton.
"At exactly 2.15pm, this gull came out of nowhere."It all happened so quickly, I didn't have time to think."
The team opened the caf in 2020 and despite being just five minutes from the beach, they've never had a feathered thief until now.
Amber said: "It's our first seagull incident."We ended up calling it [the dish] 'The Seagull Stack'."
In the footage, a winged menace swoops down as someone yells, "Oi!".The toast is lifted clean off the plate, leaving a lone pecan tumbling in its wake.
The incident took place last Friday (6 June) and the video was later shared on Instagram, where it has nearly 2,000 likes so far."What a plot twist I did not see that coming.," said one person."It gets better every time I watch," added someone else.
"Another happy customer! He certainly thinks it's good, he even recommended it to some friends," joked another viewer.Someone else said: "So kind of you to buy those seagulls breakfast."Another person joked: "They must be getting bored of stealing pasties and have now moved up to fine dining."
