Unique use of watermelon peels

New Delhi: If you usually throw away watermelon rinds, think twice before doing so next time. These peels are rich in nutrients and you can turn them into a delicious vegetable. This curry tastes delicious with paratha, puri, roti or rice.

The taste of this curry is so amazing that hardly anyone will be able to recognize that it is made from watermelon peels. To make this, first peel the watermelon and remove the green hard part. Wash the white part thoroughly and cut it into small pieces. Keep in mind that the pieces should be small, as they will take some time to cook.

  • mustard oil
  • 3-4 tbsp asafoetida
  • 1 pinch dry red chilli
  • 1 tsp fennel
  • 2 tsp cumin
  • 1.5 tsp nigella seeds
  • ½ tsp ginger
  • 2 tsp garlic
  • 2 small onions
  • 1 cup green chilli
  • salt as per taste
  • Turmeric powder ½ tsp, Red chilli powder 1.5 tsp, Coriander powder
  • 1 tablespoon watermelon rind
  • about 3 cups watermelon juice
  • ¼ cup dry mango powder, 1 tsp kasoori methi

Heat mustard oil in a pan and add mustard seeds, fennel seeds, cumin seeds and nigella seeds. Fry them for a while. When the spices are roasted, add dry red chilli, chopped garlic, ginger and green chilli. Keep frying this mixture for 1-2 minutes. Then add onion and fry until golden. When the onion is roasted, add chopped watermelon peels to it and mix well.

Now keep stirring the mixture and cover the pan. Cook the peels on medium flame for 2-3 minutes. Then make juice by blending one cup of chopped watermelon and add it to the curry. Cover the pan again and cook the curry on low flame for 18-20 minutes. Keep stirring in between. When the peel becomes soft, add dry mango powder and Kasuri methi and mix well.

You can serve this dish with hot parathas or ghee coated rotis. The balance of spices in it gives the experience of sourness and mild sweetness. When you serve it to your family, they won’t even know that it is made from watermelon peels. Therefore, while bringing watermelon this summer, do not throw away its peels, instead make a delicious vegetable.
