125ml fresh lime juice (about five limes)
30ml tequila
45ml cointreau (or triple sec)
150g icing sugar
500ml double cream
Pour the lime juice, tequila, and Cointreau into a bowl and stir in the sugar until it is dissolved.
Add the cream into the bowl and then whip the mixture until thick and smooth but not stiff.
